Working under the leadership & mentorship of a Michelin Restaurant Trained Chef and a Certified Chef de Cuisine.
As the 1st Cook your position is critical towards delivering the promised exceptional dining experience for our residents.
Reporting directly to the Executive Sous Chef, responsibilities for this role include preparing high-quality food for our residents, assisting in the weekly planning and overseeing key aspect of kitchen operations including compliance with health and safety requirements.
Prepare and cook complete buffet style meals and/or individual dishes consistent with Opal’s menu plan
Take on an active role in the production and presentation of all food products
Using standardized recipes based on standard portion sizes, prepare and cook hot and cold entrées, baked goods and desserts for both general and therapeutic diets by methods/procedures such as roasting, frying, grilling, steaming, poaching, boiling and baking
Coordinate the activities and workflow during production, presentation and cleanup
Ensure food is stored in appropriate containers, labeled, and rotated to ensure high standards of freshness, minimizing waste and maximizing quality
Carry out the opening/closing kitchen duties according to Opal kitchen operations guidelines and regulatory requirements
Assist in planning weekly menus, portion control, food requirements and costs, and monitor and order supplies as required
Test food items for food palatability and temperature and making adjustments if necessary.
Ensure the kitchen is being cleaned to Opal standards on an ongoing basis
Ensure food safety checks are being performed in accordance with the Opal Food Safety Plan and regulatory requirements
Regularly engage in inspecting equipment, machinery and cooking areas to ensure the health and safety requirements are consistently being met
Work in a flexible schedule including days, evenings, weekends and public holidays
In the absence of the Executive Sous Chef and 1st Cook, take on the responsibility for the operations and production of the department
Perform other related duties as requested by Executive Sous Chef
Who you are:
Completion of cooks training in a recognized institution and/or equivalent experience and training.
Four (4) years of kitchen operations preferably in a fast-paced environment and delivering high end Western and/or Cantonese Cuisine.
Experience with baking, pastry making and desserts would be a strong asset.
Possess a Food Safe Level 1 Certificate
Experience working in high volume, quality and hospitality establishments.
Good written and oral communication skills in English (Cantonese/Mandarin would be an asset)
Red Seal Certification would be an asset
